Production is year-round (the input is yeast culture, not a seasonal raw material), so scheduling is generally driven by batch capacity and standardization rather than supply availability.

Some Japanese fermentation contract manufacturers will develop custom strain × substrate combinations for brand owners under exclusivity terms, with separate development fees and minimum annual offtake commitments. This is a multi-month engagement (often 6+ months) and includes process development, QC method establishment, and stability work.
