Wild-harvest common octopus (Octopus vulgaris) from the Akashi Strait between Hyogo and Awaji Island. The strong tidal currents in the strait produce octopus with markedly firmer, sweeter flesh than other origins. Akashi's takoyaki tradition is anchored in this premium octopus supply.
