  Founded in December 1906 at 8 Kitasentan-batamachi, Kumamoto City, Hoshi San Co., Ltd. began full-scale miso production in 1921 and started sauce sales in February 1934. An amino acid manufacturing plant was completed in July 1936, followed by the establishment of Hoshi San Sales Partnership in October 1940 and Kosho Soy Sauce Partnership in December 1940. The Second Factory was completed and began operations in February 1944, and Kosho Sauce Manufacturing Co., Ltd. was established in June 1951. The company celebrated its 50th anniversary in November 1956 and launched the comprehensive seasoning brand "Hoshi no Aji" in October 1959. Sales offices in Amakusa opened in March 1962, and the company celebrated its 60th anniversary in December 1966. The Shimizu Plant was completed in December 1968, and the headquarters and soy sauce plant were completed in 1973. In 1983, a state-of-the-art miso factory was completed at the headquarters and the company was selected as one of Japan's 100 most advanced enterprises by Nikkei Inc. The company changed its name from Kosho Soy Sauce to Hoshi San Co., Ltd. in 1985 and celebrated its 100th anniversary in 2006. In 2012, the company received the Kumamoto City HACCP 7-stage certification, and a new soy sauce plant was completed in 2018. In December 2022, Kanji Kosho assumed the position of Chairman and Kazumasa Fukushima assumed the position of President.
