  The company traces its origins to the Kaei period when Iwahashi Yasube, the founder, established Shimada-ya in Isshi District, Mie Prefecture. Vinegar fermentation production was initiated in July 1887 by the third-generation Iwahashi Shigekichi (founding year), with the trademark "Yamani Vinegar" registered in April 1890. A new fermentation facility was established in Akaragi-cho, Tsu City in December 1893, followed by expansions in 1903 and 1918. The company was incorporated as Yamani Zosu Co., Ltd. in October 1925. The fourth-generation president, Iwahashi Seijiro, assumed office in April 1929. The brewery was severely damaged in the Great Tonankai Earthquake in December 1944. Iwahashi Jiro, the fifth generation, became the third president in March 1955, followed by the sixth generation, Iwahashi Hiroyoshi, as the fourth president in September 1965. In 1979, the company undertook condominium development and capital increase. Mini-soy sauce bottling operations commenced in 1998, and Worcestershire sauce manufacturing began in 2007. The seventh-generation Iwahashi Kuniaki became the fifth president in June 2009. In 2013, the company expanded into overseas markets and established a sixth industrialization contract manufacturing division. The trademark rights to "Shichihō Takara" were acquired in January 2020.
