Green papaya — the unripe fruit of Carica papaya — is rich in latex enzymes including papain, chymopapain, and carpain. In Japan, raw papain is regulated as a pharmaceutical (医薬品) and cannot be used directly in foods or supplements. Japanese ingredient companies therefore process unripe papaya through controlled microbial fermentation to produce a food-grade material suitable for use in functional supplements and beauty drinks.

What it is

Fermented green papaya is produced by inoculating unripe Carica papaya fruit (whole fruit or pulp) with selected yeasts and other food-grade microorganisms, then carrying out a controlled solid-state or liquid fermentation. The fermentation transforms the raw enzyme load into a stable, food-grade preparation that can be standardized, dried, and granulated.

On Japanese product labels the material is typically declared as パパイア果実発酵物 or 青パパイヤ発酵物. Finished preparations are commonly supplied as granular sachets, capsules, tablets, or as a powder for inclusion in beverages.

Typical uses in Japanese products

Fermented green papaya is used in granule-sachet supplements, capsules, tablets, and functional beverages including beauty drinks. Marketing positioning typically emphasises antioxidant support, daily wellness, and digestive comfort.

Suppliers and brand preparations are not interchangeable. Different fermentation substrates, microbial cultures, fermentation duration, and downstream processing produce materials with meaningfully different composition and standardisation. Formulators should evaluate each supplier's technical specification individually.

Regulatory classification in Japan

Food ingredient regulated under the Food Sanitation Act. Fermented forms are accepted as food-grade.

Raw papain (the isolated enzyme from unripe papaya latex) is designated as a pharmaceutical (医薬品) in Japan and cannot be used as a food or supplement ingredient. Only fermentation-processed preparations that no longer present raw enzyme activity are eligible for food and supplement use.

Specific fermented green papaya preparations may be eligible for Foods with Function Claims (機能性表示食品 / FFC) notification where the preparation has the supporting evidence required by the Consumer Affairs Agency. Eligibility is preparation-specific.

Regulatory classification in other markets

EUConcentrated fermented papaya extracts may fall within the scope of the Novel Food Regulation (EU) 2015/2283. Suppliers should confirm the regulatory status of their specific preparation prior to placing on the EU market.
USAFermented papaya derivatives are commonly used in dietary supplements under DSHEA. GRAS notifications exist for selected fermented preparations; raw papain enzyme is also marketed as a supplement and food enzyme ingredient.
ChinaUse as a supplement ingredient depends on whether the specific preparation is classifiable as a conventional food, a new food raw material, or a registered health-food (保健食品) ingredient. Confirmation against the relevant NHC / SAMR lists is required prior to import.
