Mugicha is a Japanese roasted barley tea, naturally caffeine-free and served cold in summer as a household staple. Export applications include children's beverage ranges and caffeine-free functional beverage lines. Note: mugicha contains barley gluten.

Standardised extract of common (Fagopyrum esculentum) or tartary (F. tataricum) buckwheat, primarily standardised to rutin content. Tartary buckwheat carries 5–10× the rutin of common buckwheat and is the basis of high-end functional food positioning. Hokkaido produces about 50% of Japan's domestic buckwheat by volume; Nagano, Iwate, and Yamagata round out the supply. Used in functional foods for circulatory support, in tartary-buckwheat tea, and as a feedstock for rutin-positioned supplements.

Japanese glutinous rice (mochigome) — distinct from the everyday short-grain rice (uruchimai) used as table rice. The high amylopectin / low amylose ratio creates the chewy, sticky texture central to mochi, daifuku, sekihan, okowa, and sake-brewing rice (some specialty grades). Used as a 5-10% blend in white-rice cooking (gives a purple tint), in onigiri, and as a stand-alone supplement / kuromai-cha (black-rice tea). Premium buckwheat-flour noodle from Nagano (the historical 'Shinshu' province). Four types of Nagano soba (Togakushi, Kaida-Kogen, Yamatoyama, Tobishima) are recognised as MAFF-registered or regional brand specialties. Nagano produces over 50% of Japan's buckwheat (Hokkaido leading recently); the high-altitude cool climate favours premium buckwheat cultivars used for the Shinshu soba. Very thin (1-1.3 mm) wheat noodle, traditionally hand-stretched and aged. Three principal Japanese GI-protected origins: Miwa Sōmen (Nara, 1,300+ year heritage), Ibonoito Sōmen (Hyogo), and Shimabara Sōmen (Nagasaki). Distinguished from udon by thinness and from cold soba by wheat composition. Heritage production involves multi-day stretching / aging cycles; mass-volume retail is increasingly machine-extruded. Premium Hokkaido-developed rice cultivar (released 2008) — the flagship Hokkaido rice positioned to compete with Koshihikari.
