In 1800 (Kansei 12), the founder Matabe began brewing soy sauce in Sakai under the name Kawachiya. The shop relocated to Sakai Shin-zaike-cho in 1830, and the name was changed to Kawamori in 1871. The trademark 'Matsu no Mori' was registered in 1889, and the brand was granted Imperial Household Agency (Kunaichō) approval in 1898. In 1905, the company pioneered Japan's first pure cultivation of soy sauce koji fungus 'Kawamatakabi', and completed a new factory with mechanized operations in 1907. The company was incorporated in 1926. Following the Sakai air raid of 1945 that destroyed the headquarters factory, operations were restored in Ishizu-kitamachi the following year. In 1952, the company developed the industry's first vitamin-enriched soy sauce, and obtained JAS certification in 1964. The brand 'Ō Shōyu' was launched in 1969 to commemorate the 170th anniversary of its founding. Taisho Co., Ltd. was established in 1970. In 1974, the fifth-generation Kawamori Taizō assumed the position of second president and launched 'CO-OP Shōyu'. The company entered the flavored soy sauce market with 'Yuzu Ponzu' in 1980. By around 1999, Taisho had become the sole soy sauce brewing manufacturer in Osaka Prefecture. In 2000, Kawamori Mikio became the fourth president and the company released 'Hasami-yaki Soy Sauce' to commemorate its 200th anniversary. ISO 9001 certification was obtained in 2004. In 2006, 'Sakai Takumi' received Sakai brand certification. In 2011, 'Shinseigyō Shōyu' obtained 'Osaka Product Excellence' certification. A flavored soy sauce production facility (FS Building) was completed in 2017, and JFS-B standard compliance certification was obtained in 2021.
