What it is

Black soybean seed extract is produced by water or hydro-alcoholic extraction of black-cultivar Glycine max seeds. The extract contains anthocyanins (primarily cyanidin-3-glucoside), isoflavones including daidzein and genistein, proteins, and amino acids.

Typical uses in Japanese products

In cosmetics, black soybean extract appears in face toners, essences, and hair products, often positioned around antioxidant and Japanese-heritage narratives.

In food, kuromame are a New Year osechi-ryōri staple, simmered in a sweet soy-sauce-based liquid. The same beans are also used for black bean tea.
